It is in bloom from May to summer. The flowers grow sporadically towards the top of the plant forming a panicle. The corolla, which has red buds, turns light blue after blooming. SOWING: the seeds can either be bedded out from March to September, or during winter in large pots in a heated greenhouse. Harvesting can start 6-10 weeks after sowing.

Annual herbaceous plant, 30-70 cm tall. The stem is straight, cylindrical, very branched, green, often reddish. The flowers are minuscule and the corolla has five white or pink bilobate petals. Nepeta cataria

Sow in dishes or trays at a depth of 1-2 cm. Press soil down lightly and carefully moisten. Trays should then be placed in a warm light place. As soon as the plants reach a height of 5 cm, the trays should be positioned so that cats can bite at this refreshing foliage. For a constant supply of “cat grass”, sow again every 3 weeks. SOWING: all year round.

Lavandula Officinalis

This plant grows to a height of between 40-100 cm and the stem has many branches, the younger of which are herbaceous, quadrangular and are covered with a thin grey pubescence similar to the leaves which  are sessile and are opposed on the plant. The flowers are light blue in colour, small and form small bunches. It flowers from June to July. The crop lasts from 6 to 10 years. SOWING: in spring and summer for Mediterranean climates.

Marjoram is a suffrutex that grows to a height of 40-50 cm. The stem is pubescent, quadrangular and branched with opposing, small oval leaves that are a greysh colour and tomentose. The roots are fascicled and slender. The flowers are sessile and are white with shades of red. They are grouped together in spike-shaped inflorescences on the tips of the secondary branches. Cultivation in our environments lasts between 4-5 years. Marjoram is widely used in cooking to flavor dishes. Furthermore, it has digestive and diuretic properties. SOWING: directly at the end of  March.

Melissa Officinalis L.

Melissa is an herbaceous perennial, 50-90 cm tall. It has branched, erect, quadrangular stems. The leaves are oval and serrated and grow opposed on the plant. The flowers (which are either red or white) grow near the steam of the leaves. The crop usually lasts 4-5 years but does very occasionally last up to 8 year.

SOWING: is used sown towards the end of winter in a greenhouse (heated to a temperature of 20-25 °C during the first 3 weeks and 12-16 °C thereafter). Transplant in May or June

Peppermint is a herbaceous plant, 50-60 cm tall and has a branched, fibrous root. Its branched stem is quadrangular, upright and is either green or violet in colour. The leaves are serrated and opposed on the plant. The flowers are either rose-violet or whitish in colour and are almost always sterile. They group togheter on small spikes protruding from the plant which flowers in July. SOWING: in spring and autumn for Mediterranean climates.

Oregano is a perennial and can reach a height of 50 cm. The reddish-coloured stem tends to have few branches or thorns. The oval-shaped leaves (2-3 cm by 1,5 cm) have short stalks which are approximately 1 cm long. The leaves are occasionally serrated. Its small flowers are bunched closely together and form flat panicles. The plant’s aroma varies depending on where it is cultivated: the oregano grown in southern Italy (widely used as seasoning), has a much stronger aroma than the oregano grown in northern Italy. SOWING: during the spring in open field or in seedbeds from July to August for transplanting in October-November.

Rosmarinus Officinalis L.

This evergreen shrub, which grows to a height of almost 1 m, has sweet-smelling leaves and upward-growing branches. During the fine season, it is almost always in bloom. The upper lip is whole or with three small teeth. The interior is divided into two long teeth. The corolla is light violet in colour. There are two protrusions which protrude from the corolla. SOWING: during the spring and autumn.

Perennial plant originating in Southern Europe, up to 80 cm tall. Branched stem and yellow-greenish flowers. The leaves are collected before flowering and can be used fresh or dried.

SOWING: in spring, transplanting the potted seedlings into the open field, in a sunny place.

Sage grows a height of between 50 and 60 cm. It is completely pubescent  and  has a quadrangular, branched stalk. Its leaves are 7-8 cm long and have a rough surface with serrated edges. The leaves growing further up plant are small and deciduous. The roots are  tightly bunched together. The tubular  flowers grows closely together with between 5 and 10 flowers per bunches. They  are either light violet or pink in colour. SOWING: the seeds can be field-sown in April or can be planted in a greenhouse towards the end of winter

Summer savory is a perennial aromatic plant typical of the Mediterranean area. It reaches a height of about 40-60 cm and blooms at the height of Summer. The flowers, a pale pink colour, emit a pleasant aroma.

SOWING: in a seedbed at the end of winter. The seedlings must then be transplanted in rows 50-60 cm apart.

672 THYME

Thymus Vulgaris  L.

Thyme grows to a height between 20 and 50 cm. The leaves are pointed, have curved edges and are grey-green in colour. The flowers are small, tubular and are red-violet in colour. They  group together where the leaves join the stem.

SOWING: the seeds should be sown in a greenhouse during March; the plant is in blossom from June to September.
